Matcha Green Tea Shortbread Cookies

These cookies are just delightful. Here is a recipe that allows you to enjoy the soft and buttery taste of shortbread cookies but also, get the energy and antioxidant benefits of Matcha green tea.
Green tea powder adds delicate green tea flavor and color to desserts such as cookies, cupcakes, ice cream and beverages including lattes, smoothies and frappes.

¾ cup confectioner’s sugar
2 Tbsp Pinch 'n Rub Matcha Latte Green Tea powder
10 Tbsp butter, room temperature
1 ¾ cups flour
1/8 tsp Pinch 'n Rub Himalayan pink salt, fine  
3 egg yolks, beaten
Sugar for dusting (We love to use our Vanilla Sugar, or our LemonSugar)

Directions: 
Whisk powdered sugar and Matcha powder together. Beat butter and sugar mixture until smooth. Stir in flour and salt.  Mix just until incorporated. Stir in beaten egg yolks until smooth dough is made.

Knead dough into a ball. Place on plastic wrap and then roll to ½ inch thickness. Cover in plastic and refrigerate for 30 minutes.

Preheat oven to 350 degrees Fahrenheit. Remove dough from refrigerator and, using a cookie cutter, cut into shapes. Cover shapes on all sides with sugar and place on baking sheet lined with parchment paper.

Bake cookies until golden on edges (approximately14 minutes). Enjoy!

Variation: You can roll dough into a log before refrigerating for slicing instead of cutting with a cookie cutter.
